Orange Shrimp Wonton
Serves 4

Whole Shrimp Wonton, 12 pc
1 c. sugar
2 tbsp. white wine vinegar
Juice of 4 oranges
1 c. Grand Marnier
Grated rind of 2 oranges
12 pieces CP

Parsley (for garnish)
Featuring
Preheat cooking oil in deep fryer to 350°
Sauce
In a heavy saucepan, combine sugar and white wine vinegar. Cook the mixture over a medium flame until sugar melts and begins to caramelize.
Add the juice of 4 oranges, Grand Marnier and grated orange rind. Stir well and cook for five minutes.
Set aside until ready to use.
Wonton
Microwave 12 pieces of shrimp wonton on high for 50 seconds.
Remove shrimp wonton from microwave and deep fry at 350° for 2-3 minutes until the skin begins to turn golden brown.
Garnish plates with three orange slices, forming a circle.
Place 3 deep fried wontons on the orange slices.
Pour warm orange sauce over the wontons and orange slices.
Garnish with parsley.
